Come fall, Saturday is game day around my house. Actually, Sunday is game day, too. Needless to say, I have a habit of making a lot of appetizers to snack on instead of a full lunch or dinner.

That makes it easier when friends just “happen” to stop by. You don’t think they’ve figured out that I’ll always have extra food, do you?

I love coming up with new and creative recipes since this is what I do almost all fall and winter long. This time around, I made these boozy bacon cheddar bites, and wow did they disappear fast.

The best part? They took only a few minutes to prep and under 10 minutes to bake. That’s my kind of game day food!

Raise your hand if you’ve ever made English muffin pizzas. Yeah, me too. It’s a classic, and it’s just one of the ways we enjoy English muffins beyond breakfast.

Too often, we think of English muffins as a breakfast food in my house, but then I get reminded of how many fun ways there are to enjoy them. You can make everything from fresh heirloom tomato tartlets or sundried tomato caprese panini or even a cobblestone chicken pot pie.

They’re perfect for snacks or dinner or even dessert, not just breakfast.

It works, too. Although as fast as my family eats them, any friends who wanted any this past weekend were out of luck. This makes 24 little boozy bacon cheddar bites, and it’s so simple to scale it up to make more for a crowd.

How to Make Boozy Bacon Cheddar Bites

Start by cutting your bacon into matchsticks. Add the pieces to a pan and turn the heat to medium.

Cook the bacon thoroughly until lightly crispy, then use tongs to remove them and place on a paper towel to drain.

Preheat your oven to 425 degrees while your bacon cooks.

In a bowl, add the mayonnaise, mustard, hot sauce, and beer. Stir to incorporate the mayonnaise.

Add the bacon and cheese, then stir again.

Pull out a baking sheet and line with a silpat or parchment paper to make cleanup easy. Separate a package of six English muffins and lay out on the pan.

Add a heaping spoon of the cheese mixture to each of the English muffin halves and spread to the edge. Place any extra on halves that look like they need a little more.

Place the pan in your 425 degree oven for 6-8 minutes. Remove once cheese is bubbly.

Place each English muffin half onto a cutting board, and use a pizza wheel to cut into quarters. Add each boozy bacon cheddar bite to a tray, and serve immediately.

These are best when still warm. If you make them in advance, you can store them in your fridge in a tightly sealed container up to two days and reheat before serving.

Ingredients

  • 4 slices thick cut applewood smoked bacon
  • 6 BAYS English Muffins
  • 1/4 cup mayonnaise
  • 1/4 cup stout or dark beer
  • 1 tablespoon coarse ground mustard
  • 1/4 teaspoon hot pepper sauce
  • 2 cups cheddar cheese shredded
  • Smoked paprika optional

Instructions

  • Optional: Sprinkle paprika over each of the boozy bacon cheddar bites.
