Yes, I’m still talking about my cookie swap. In addition to the cookies I make (chocolate chip cookie dough truffles and Mexican triple chocolate cookies this year), I always have a signature cocktail because… it’s just fun.
Last year, it was a Christmas sweet and sour cocktail, the year before was a chocolate martini, and so on. This year, I wanted to do something that was more red.
Since I have a ton of frozen cherries, I decided to focus there. While I usually make a baked cherry oatmeal or my cherry syrup with my frozen cherries, they’re perfect for cocktails, too.
We have a winner, folks.
The Christmas cherry fizz was delightful, a little sweet, and oh so tangy. It was quick and easy to make whenever we needed refills – and yes, we needed frequent refills that evening – making it the perfect signature cocktail for the cookie swap.
To keep it cold, use large ice cubes, or get creative and simply add extra frozen cherries to your drink. I love that the cherries don’t water down your drink – unlike ice cubes.
That said, if you whip up a fresh batch and pour it immediately, you don’t need anything to keep it cold.
You can make the base to the Christmas cherry fizz in advance, and just add the pop when you pour it for guests. This doesn’t give you the fun foam, but you may prefer it without the foam, as some friends do.
If you make the base in your blender and don’t want to have foam, simple strain it as you pour it into the glass. You can do this with a cocktail shaker or a fine mesh strainer – you have both in your house, right?
While I call this my Christmas cherry fizz, it tastes great year ’round. This is a great summer cocktail, and I bet you’d have fans on New Year’s Eve or Valentine’s Day, too.
If you plan to make this for a crowd, this recipe multiplies well. Simply double or quadruple, etc the ingredients. You can even make most of it in advance and chill it so your signature cocktail is ready for your guests.
How to Make Christmas Cherry Fizz
This makes enough for four drinks. If you want a stronger drink, halve the pop you add and make two cocktails instead of four.
Place the cherries and sugar in a blender and top with the pineapple juice and vodka. Pulse until it’s well mixed.
If you want to avoid the foam, pulse just a few times just until the cherries are broken up but not pulverized. This gives you the same flavor but a different mouth feel.
If you want to make your Christmas cherry fizz in advance before guests arrive, make it to this point. Place the cherry base into a sealed container in your fridge, and keep it cold up to two days.
When you’re ready to serve, pour the cherry mixture into four glasses. Top with pop, and add extra cherries to keep the drink cold, if you choose.
Garnish with mint, if desired. Serve immediately and enjoy!

Ingredients
- 1/4 cup frozen cherries
- 1/2 cup pineapple juice
- 2 teaspoons sugar
- 1 1/2 ounces vodka
- 2 cups Sierra Mist or other lemon lime pop
- Mint for garnish optional
Instructions

Notes
- To keep your drink cold, add extra frozen cherries after you pour the drink into a glass. The cherries keep your drink cold without watering it down.
- You can make this up to two days in advance. Blend the cherry base together and store in a sealed container in your fridge, then add the pop when you're ready to serve it.
