Super Simple Halloween Monster Marshmallows

I am obsessed with fun Halloween treats, probably a remnant from my days a a room mom for my kids. These Halloween monster marshmallows are probably the fastest and easiest treat I can make.

My kids always loved them. I mean… what kid doesn’t love marshmallows, and I’ll admit to being the adult who loves marshmallows, too.

This is a perfect way to use up leftover melted chocolate you may have from other Halloween projects, so you have the added bonus of a treat and less waste. It’s a win all around.

What kind of chocolate should I use?

For these Halloween monster marshmallows, all you need it chocolate melting discs. My favorite is the Wilton brand, as I find that they melt smoothly and have consistent color.

For fun, I usually choose two or three Halloween colors to make my monsters, but you can do whatever makes you happy. My favorite is orange, green, and purple.

That said, you could also use green marshmallows with melted dark chocolate to make a Frankenstein version of these. You can sometimes find them seasonally in stores, but it’s easier on Amazon.

Are these Halloween monster marshmallows gluten-free?

The good news is that yes, these are absolutely gluten-free. They are not vegan, however, nor are they dairy-free.

Marshmallows are naturally gluten-free, but they contain gelatin. You can fairly readily find vegan marshmallows thankfully.

The melting discs are also gluten-free, but they contain milk and soy. It is much more difficult to find a vegan melting chocolate, but you can get creative.

The candy eyes and sprinkles are also gluten-free. Again, candy eyes are not vegan generally, though you can make homemade candy eyes that are, but you can more easily find vegan sprinkles.

As always, I’ll give you the caveat that you should always check package ingredients. You know as well as I do that manufacturers change things up all the time.

What’s the best way to melt chocolate?

While I generally melt chocolate on the stove, for melting discs, I usually make an exception and use my microwave. You have to be just as careful to not scorch the melting discs as this ruins both the taste and texture.

Place the discs in a microwave safe bowl, and heat it on 20 second bursts. Stir between each round and check on how close it is to being melted.

When the chocolate is most of the way melted but not entirely melted, do not heat it any more. Instead, stir it gently until the chocolate melts the rest of the way.

This has two benefits. First, it keeps the chocolate from accidentally scorching, and second, it helps keep the chocolate tempered so that it stays as glossy as possibly with a good texture and look.

What size candy eyes work best for marshmallow monsters?

You can find all sorts of candy eyes, but my favorite to work with is the 1cm candy eyes. These are the most frequently available size, so it’s a win win there.

How to Make Halloween Monster Marshmallows

Set out your large marshmallows. You don’t need the jumbo size, and the mini ones are far too small.

Gently melt your chocolate melting discs. I do one color at a time to ensure it’s the right temperature for dipping each time.

Place your sprinkles into a dish with the sprinkles a couple layers deep. Prep your candy eyes, and you’re ready to go.

Dip your marshmallow into the melted chocolate, angling it from side to side to create an uneven border. Gently shake off the excess chocolate while the marshmallow is still upside down.

Immediately dip the marshmallow into the sprinkles to form the hair. Press just hard enough to ensure the sprinkles adhere without pushing the chocolate into your dish.

Add the candy eyes about one-third of the way down the marshmallow. They can go on any side of the marshmallow, and I usually turn it around to find my favorite front side, just like I do with pumpkins before I carve them.

Place your chocolate-dipped marshmallow onto a piece of parchment paper or a silpat with the undipped side down. Allow them to harden fully, then serve them immediately.

Store them in a tightly sealed container on your counter for up to a week. So simple and so delicious!

What other great Halloween treats can I make easily?

I love making Halloween treats, and the good news is that you can often use many of the same ingredients to make other treats that your friends and family will enjoy. It’s a great way to use up the full bag of candy melts you purchased or the candy eyes bottle.

  • If you have leftover chocolate, I love to make Halloween chocolate bark. Bonus? It’s probably the easiest thing you could ever make – second only to these monster marshmallows.
  • These witch hat Oreo cookies use the same melting discs and are super fun to make and eat.
  • I had the most fun making these Frankenstein pretzels. They’re almost too cute to eat, but they taste so good you can’t help yourself.
  • And of course, my all time favorite is my Halloween monster cake pops. They’re the only one that isn’t a no-bake recipe, but they’re so worth it!

Halloween Monster Marshmallows

Ingredients

  • 12 ounces large marshmallows generally 18
  • 1/2 cup chocolate melting discs choose your favorite colors
  • 36 eyes candy eyes
  • 1/4 cup sprinkles

Instructions

  • Prep all ingredients. Place sprinkles in a small dish, and get candy eyes and marshmallows out of their containers.
  • Gently melt a single color of the melting discs at a time until almost all melted, then stir until fully melted.
  • Dip a marshmallow into the chocolate, creating an uneven border at the bottom. Shake off excess chocolate.
  • Immediately dip top of the marshmallow into sprinkles. Add candy eyes about one-third of the way down the marshmallow.
  • Place uncoated side down on a piece of parchment paper or silpat, then repeat for each marshmallow.
  • Let chocolate harden for 10-15 minutes, then serve immediately or store in a tightly sealed container on your counter for up to a week.

Notes

  • You can make these all one color or use multiple colors for different monsters. If you use multiple colors, melt and dip one color at a time.
