Ricotta toast is one of my go to breakfasts. It’s so simple and tasty – and it doubles as a lovely snack, as well.

While avocado toast may have held the breakfast spotlight for some time, ricotta toast can easily steal the show. As much as I adore creamy avocados, ricotta toast brings an entirely different dimension to your morning routine.
The biggest reason I love ricotta toast more than avocado toast is that I have more than the precious two hours that my avocado is ripe to enjoy this. I don’t have to worry about choosing the perfect avocado and enjoying it in a narrow window before it goes bad.
Ricotta will last in my fridge for at least a week, and I can easily go through a small container before it goes bad. There goes any guilt about wasting food.

What Kind of Bread to Use for Ricotta Toast

Why You Should Use Full Fat Ricotta Instead of Fat-Free Ricotta
When it comes to ricotta, don’t skimp on the indulgence. Opt for full-fat ricotta instead of its fat-free counterpart. The higher fat content doesn’t just add richness, it also contributes to that luscious, creamy texture that makes ricotta toast irresistible.
Plus, a little indulgence at breakfast can set a positive tone for the rest of the day. The fat free ricotta is often dry and crumbly, especially when you buy it prepackaged versus from a deli counter. The minimal extra calories and fat are worth it when you make whipped ricotta toast.

Here’s what you’ll need to create your ricotta toast masterpiece:
- Sourdough Bread: A hearty base with the perfect crunch.
- Ricotta Cheese: The creamy star of the show.
- Olive Oil: For that extra touch of richness.
- Cream: To achieve that dreamy whipped texture. Note that you can substitute with milk.
- Salt and Pepper: For seasoning that enhances all the flavors.
How to Make It Whipped Ricotta Toast
Creating the perfect ricotta toast is as easy as it is rewarding.
If you bake your fresh Wildgrain sourdough bread, be sure to let it cool for at least 20 minutes so it doesn’t dry out from the steam escaping while it’s hot.
Slice your bread into three-quarter or so thick slices, and toast them.
While the bread toasts, add the ricotta and a splash of cream to a bowl. If you have a blender, use this, but you can use a whisk, as well. While beating the ricotta, drizzle in the olive oil. Continue mixing until the ricotta is smooth and creamy.
Slather the warm toast with the creamy whipped ricotta, then drizzle lightly with olive oil. Add a good dose of freshly grated pepper and a sprinkle of salt.
