Baked Peaches are a simple yet delicious dessert that highlights the natural sweetness of ripe peaches. Gently baked with a touch of honey and cinnamon, these peaches become tender and caramelized, creating a warm and comforting treat. Perfect on their own or served with a scoop of vanilla ice cream, baked peaches are a delightful way to enjoy the flavors of summer.
Cut the peaches in half and remove the pit. Place them cut side up in a glass baking dish.

Place the cookies into a bag and proceed to crush them – a rolling pin works well. Add the brown sugar and shake until it’s well mixed up.
1/2 cup Amaretti cookies, 3 tablespoons brown sugar
Place the butter in the bag and smoosh it around until it’s well combined. Add the rum (or other alcohol) and smoosh some more. Place a dollop of the cookie mixture into each half of the peach.
2 tablespoons unsalted butter, 1 1/2 tablespoons dark rum
Bake the peach halves in a 350 degree oven for 10-15 minutes until the juices are bubbling. Serve while they’re still warm (you can make it all ahead up to the baking point if you do this for company) either by themselves or with ice cream.
