Boozy Bacon Cheddar Bites
These boozy bacon cheddar bites are an easy appetizer using English muffins. This is perfect for any potluck or football party, ready in under 20 minutes.

Ingredients
- 4 slices thick cut applewood smoked bacon
- 6 BAYS English Muffins
- 1/4 cup mayonnaise
- 1/4 cup stout or dark beer
- 1 tablespoon coarse ground mustard
- 1/4 teaspoon hot pepper sauce
- 2 cups cheddar cheese shredded
- Smoked paprika optional
Instructions
- Cut bacon into matchsticks and cook in a pan until crispy. Place cooked bacon on a paper towel to drain.4 slices thick cut applewood smoked bacon
- Preheat oven to 425 degrees while bacon cooks.
- In a bowl, add mayonnaise, mustard, hot sauce, and beer. Stir to incorporate.1/4 cup mayonnaise, 1 tablespoon coarse ground mustard, 1/4 teaspoon hot pepper sauce, 1/4 cup stout or dark beer
- Add bacon and cheese, then stir again.2 cups cheddar cheese
- Line baking sheet with silpat or parchment paper. Separate a package of six Bays English Muffins and lay halves on pan.6 BAYS English Muffins
- Add a heaping spoon of cheese mixture to each half and spread to the edge. Place any extra on halves with less filling
- Bake in 425 degree oven for 6-8 minutes. Remove once cheese is bubbly.
- Cut each English muffin half into quarters, and serve immediately.
- Optional: Sprinkle paprika over each of the boozy bacon cheddar bites.Smoked paprika
