These soft and chewy cookies are darkly chocolate and delicious with the yummy flavors of a s'more in a fun new form. You don't need a campfire to enjoy these!
Preheat oven to 350. Line a baking sheet with parchment paper or a silpat.
Crumble graham crackers coarsely and set aside.
2 full size graham crackers
Beat brown sugar, butter and granulated sugar until lightened. Add egg, coffee, then beat again.
3/4 cup unsalted butter, 1/4 cup sugar, 1 cup brown sugar, 1 egg, 1 tablespoon cooled coffee
Add salt, baking soda, baking powder, and cocoa. Mix well. Add oats and mix on low. Add flour and mix until flour is almost gone. Stir in chocolate chips and marshmallows.
1/2 teaspoon salt, 1/2 teaspoon baking powder, 3/4 baking soda, 2 cups oats, 1/3 cup cocoa, 1 1/4 cups flour, 1 cup chocolate chips, 1 cup mini marshmallows
Scoop rounds of cookies, then press a graham cracker pieces into the top of each cookie ball.
Bake 15-17 minutes, just until cracked on top. Let cool on baking sheets for five minute before placing on wire racks to cool the rest of the way.
