Preheat oven to 450 degrees. If you have a pizza stone, make sure it's in your oven.
Make pizza dough, either using your own recipe or store bought. Roll it into a round that will fit your pizza stone or baking pan.
1 recipe pizza dough
Sprinkle pan or pizza peel (if you're using a stone) with cornmeal. Carefully place pizza dough onto the peel or baking dish. Add chimichurri sauce and spread with the back of a large spoon. Top with mozzarella.
1/2 cup chimichurri sauce, Cornmeal, 1 1/2 cups mozzarella cheese
Slice churrasco into bite size pieces and set aside.
Bake for 10-12 minutes, until mozzarella is golden brown.
If you are using leftover churrasco that is cold, add it to the top of your pizza five minutes into the baking, just strewing it across the top of the pizza. If your churrasco is just cooked and still warm, simply add it to your pizza once it's finished baking.
Making pizza dough is super easy. If you don't have time or aren't comfortable with it, most stores now have refrigerated pizza dough that you can use. Either whole wheat or "regular" dough will work just fine.
