Melt the butter in a large, heavy saucepan with the brown sugar. Remove from heat once melted and stir until fully dissolved. Add the vanilla and beaten eggs and mix until well combined.
2/3 cup unsalted butter, 1 1/2 cups brown sugar, 2 teaspoons vanilla, 2 eggs
Add the baking powder, baking soda, salt, and oats. Mix well. Add the flour and stir gently until just mixed. If you notice that the batter is soapy, that is completely fine.

Pour the batter into your greased pan. Sprinkle the chocolate chips evenly over the batter.

Bake at 350 for 25-30 minutes – until a tester comes out clean. Cut into squares and serve.
