Craving a sweet and satisfying treat? Look no further than Classic Carmelitas! This gooey delight layers chewy oat cookies with a rich and creamy caramel sauce, all topped with melty chocolate chips. It's the perfect combination of textures and flavors, guaranteed to satisfy your sweet tooth and leave you wanting more.
Combine 1 cup flour, oats, sugar, baking soda, salt and butter. Blend with a pastry cutter or fork until the mixture resembles coarse crumbs. Press half of the mixture into the bottom of a greased 11” by 7” baking pan.
1 1/4 cups flour, 1 cup rolled oats, 3/4 cup packed brown sugar, 1/2 teaspoon baking soda, 1/4 teaspoon salt, 12 tablespoons unsalted butter
Bake in a preheated oven at 350 degrees for ten minutes.
Remove the pan from the oven and sprinkle chocolate chips and pecans over the crust. Mix caramel topping with remaining 1/4 cup of flour. Pour over the chips and nuts. Sprinkle the remaining crumb mixture over the top. Put the pan back into the oven and bake for 25 minutes.
6 ounces chocolate chips, 1/2 cup pecans, 3/4 cup caramel syrup
Let it cool and chill and then cut it into squares before serving.
