Preheat your oven to 425 degrees. Mix together sugar and cinnamon.
10 teaspoons sugar, 1 teaspoon cinnamon
Melt butter, and use a pastry brush to coat an unbaked tortilla thoroughly. Sprinkle cinnamon sugar over the tortilla and repeat for each tortilla. Use a pizza wheel to slice the tortilla into six triangles, cutting it in half, then into thirds.
3 tablespoons unsalted butter, 5 flour tortillas
Place tortilla triangles onto a baking sheet lined with a silpat or parchment paper. Bake for 8 minutes until puffed and golden.
Slice fruit while tortilla chips bake.
4 large strawberries, 1 banana
Make the whipped cream by adding the heavy whipping cream, powdered sugar, and vanilla to a cold mixing bowl and mix slowly until it's bubbly, then increase the speed for 1-2 minutes until you have soft peaks.
1/2 cup heavy whipping cream, 1 1/2 teaspoons powdered sugar, 1/2 teaspoon vanilla
Arrange half the cinnamon sugar tortilla chips on a platter. Top with a portion of the sliced fruit. Drizzle warm hot chocolate sauce over the fruit, then repeat with a second layer and top that with fresh whipped cream. Serve immediately.

To make the Mexican hot chocolate sauce, mix 1/2 to 3/4 teaspoon cinnamon and a pinch of chili powder into a batch of hot fudge sauce. Make my espresso hot fudge sauce for this - it's so easy and tastes amazing!
Don't use canned whipped cream for this. Keep your equipment as cold as possible, and mix this just before serving if possible. If not, cover it tightly, keep it cold in the fridge, and whisk it for 30 seconds to bring back any aeration that may have fallen.
