Place the tomato sauce and broth into a pot and heat to a boil. Heat a large skillet (e.g., bouillabaisse pan), and add the olive oil once it’s hot. Add the bacon and cook.
1 cup chicken broth, 1 cup tomato sauce, 1 teaspoon olive oil, 3 slices turkey bacon
Remove the bacon and reserve the remaining oil. Add the onion and cook for about 4-5 minutes, until translucent.
1 1/4 cups onion
While the onion is cooking, chop the bacon into small pieces. Add the rice, and cook for 3-5 minutes while stirring occasionally. Add the broth/sauce mixture and remaining ingredients.
1 cup rice, 1 tomato, 1 red pepper, 1/2 teaspoon chili powder, 1/4 teaspoon salt, 1/2 teaspoon pepper
Stir briefly, then cover. Simmer 30-40 minutes, then stir once. Serve hot.
