Strawberry Mug Cake

This seven minute mug cake is so easy to make in the microwave. It uses whole ingredients - no cake mixes here - and it makes a perfect last-minute dessert. This is a perfect dessert for one - or share it with a friend. Top it with whipped cream and extra strawberries to make it even more special.

Ingredients

5 tablespoons all-purpose flour
4 tablespoons sugar
1/4 teaspoon baking powder
pinch salt
2 tablespoons milk
3 tablespoons unsalted butter melted
1/4 teaspoon vanilla extract
1/4 cup strawberries chopped (about 2-3 medium strawberries)

Instructions

In a microwave-safe mug, whisk together the flour, sugar, baking powder, and salt until well combined.

In a small bowl or measuring cup, whisk together the milk, melted butter, and vanilla extract.

Pour the wet ingredients into the mug with the dry and stir with a fork just until combined, then gently fold in the chopped strawberries.

Microwave the mug for 1 minute, checking to see if the center is set but still soft; if it’s still wet, continue microwaving in 20-30 second intervals until fully cooked.
Let the cake cool for one minute, then top with extra strawberries or whipped cream.
