Mix together the oatmeal, sugars, salt, nutmeg, and flour. Beat in the eggs and vanilla until well combined. Drop onto a Silpat lined cookie sheet.
2 cups oatmeal, 1/2 cup brown sugar, 1/2 cup granulated sugar, 2 eggs, 2 tablespoons flour, 1/2 teaspoon salt, 1/4 teaspoon nutmeg, 1/2 teaspoon vanilla
Bake the cookies for approximately 15 minutes until they turn a lovely golden brown. Allow them to cool completely before you remove them from the silpat to avoid them breaking apart.
